Note: you will need a small pot, 2 mixing bowls and a cake pan

1 cup boiling water
1 cup chopped dates or raisins
1 tsp baking soda
1/4 cup shortening
1 cup white sugar
1 tsp. vanilla
1 Egg
1-1/2 cup flour
1 tsp. Bake Powder
1/4 tsp. Salt


Directions:
Directions:
Step 1: Add the baking soda to the pot of boiling water. (1 cup). Add the dates or raisins to the pot of water and soak. If using raisins wash them first so they puff up a bit.

Step 2: In the 1st bowl beat together the shortening, sugar, & vanilla. Add the egg and mix well.

Step 4: In the 2nd bowl sift or combine well the flour, baking soda and salt.

Step 5: Combine the dry mixture to the wet mixture and mix well.

Step 6: Add the pot of raisins or dates to the batter. (you may also add 1/2 cup of walnuts)

Final Step: Pour into the bake pan and bake for 1 hour at 350º
