6 med apples, peeled, cored and sliced-winesap, gala or granny smith
1/4 lemon, squeezed over apple slices
1/3 cup white sugar
1/4 cup brown sugar
2 tsp flour
1/8 tsp salt
1 tsp ground cinnamon*
1 tsp apple pie spice*

*Adjust spice to suit your own taste

Preheat oven to 400º Place apple slices that have been sprinkled with lemon juice in large bowl. In a separate bowl combine dry ingredients. Pour dry mixture over apples and stir/toss to coat. Put coated apple slices into large deep dish pie shell.
Top with CRUMB TOPPING: 1/3 cup butter, 1/3 cup brown sugar and 1/3 cup flour, mixed to resemble coarse cornmeal and crumbly. Crumble topping over pie and bake until done about 45 minutes. Cover edges of pie crust to keep from burning.
Note: Dot with butter and use another pie crust for Double-Crust Pie instead of the crumb topping, if desired. For Dutch Apple Pie add 1/8 cup raisins.
