1 lemon or yellow cake mix(mixed as directed on box).Pour into glass 13"x9"baking pan that has been sprayed with non-stick spray.
In a large bowl mix:
2 lbs.ricotta cheese
4 eggs
1c.sugar
1 tsp.vanilla
1 tsp.lemon juice
1-8oz.can crushed pineapple

Directions:
Directions:
Mix cheese,eggs,sugar,vanilla,and lemon juice in a large bowl.Beat until creamed.Add well drained pineapple and mix.Spoon cheese mixture over cake mix.Bake @ 350* for 50-55 minutes.Let cool in pan till cold.Sprinkle with powdered sugar.Keep in the fridge.
