3 to 6 Pounds stew beef cut up 1" to 1 1/2" chunks
3 lg onions cut into chunks
1 large or 3 regular carrots grated (lg holes)
3 large stalks celery with leaves, cut fine,
1 large can tomatoes
1 tsp paprika
1-2 tsp salt
1 tsp sugar
cooking oil to cover bottom of pan
3 lg potatoes (pared, cut up & cooked with a few slices of onion in water to cover, drain, reserve liquid).

Directions:
Directions:
Mash potatoes while hot & set aside until goulash is nearly done.

Put oil and meat in pot, bring to boil then lift out meat and throw away oil and drippings. Put meat back in pot with about 2 cups water and rest of ingredients. Bring to boil, simmer 2-3 hours.

Add mashed potatoes, stir, add more salt if needed (1 tsp), bring up to a boil but don't boil. If not thick enough add water reserved from the potatoes.

Optional:
1/2 to 3/4 lb kidneys (beef) prepared & precooked then cut up & add to stew. Cook kidneys in vinegar water until tender, throw away water, cut membranes before cooking.

*Do not add anything to the potato just mash it after cooking. It is the thickening agent instead of adding flour.
