1 baked 9" Pastry Shell
1 c. sugar + 2 tblsp.
1/3 c. corn starch
1 1/3 c. milk
6 egg yolks, slightly beaten
1 tblsp grated lemon rind
1/3 c + 2 Tblsp. of lemon juice
1/3 c. butter
1 c. sour cream
Whipped cream/Meringue - Optional

Directions:
Directions:
Mix sugar and corn starch in 2 quart saucepan. Gradually add milk, stirring until smooth. Stir in egg yolks, lemon rind and lemon juice until well blended. Add butter, cook over medium heat, stirring constantly until mixture comes to a boil and boils 1 minute. Pour into bowl. Cover surface of pudding with wax paper or plastic film. Chill. Fold in sour cream. Turn into baked pastry shell. Chill serve with whipped cream or meringue if desired.
