1 package "Uncle Ben's Long Grain & Wild Rice"
2 chicken breasts or 1 whole chicken, cooked and chopped
2 cans sliced Water Chestnuts
1 medium onion, finely chopped
2 cans cream of chicken soup, undiluted
3/4 cup Hellman's Mayonnaise

Mix all ingredients in a 9x13 pan, cover tightly and refrigerate overnight. Bake in a 350º oven for one hour.

I really enjoyed eating this dish at my sister Ruth's house many years ago and it has been a family favorite ever since. It is particularly nice dish to make for company because if you need to hold it for a while, it keeps very well at a low temperature in the oven until it is time to eat.
