1 1/2 to 2 pounds boneless pork loin chops or pork rib eye chops (each 1/2- to 3/4-inch thick)
1 tablespoon oil
2 cloves garlic, minced
Sauce:
2 teaspoons oil
1/4 cup chicken broth
1/4 cup soy sauce
3 tablespoons brown sugar
1/4 teaspoon crushed red pepper
2 teaspoons cornstarch
2 tablespoons water
Hot cooked noodles or pasta

Directions:
Directions:
1. Trim pork chops of fat.

2. Heat oil in skillet; brown chops on both sides.

3. Remove meat and add a little more oil if needed.

4. Cook garlic for one minute, being careful not to burn it.

5. In a bowl, combine oil, broth, soy sauce, brown sugar, and crushed red pepper.

6. Place chops in skillet. Pour sauce over them and cover tightly.

7. Simmer over low heat until meat is tender and cooked through, about 1 to 1 1/2 hours. Add a little water, 1 to 2 tablespoons, if needed, to keep sauce from cooking down too much. Turn once during cooking time.

8. Remove chops to platter. Dissolve cornstarch in water and stir this mixture into skillet; cook and stir until thickened.

9. Pour over chops and serve over hot buttered noodles or pasta.

This was a sample recipe that came in the mail in the 1980's, advertising one of those recipe card clubs that were so popular then, where you automatically received your cards every 6 weeks or so, and the recipe case was always included "for free".
