6 eggs
1 1/2 c. ricotta cheese
1 T. margarine or butter
3 T. diced onion
2 T. flour
dash salt
1/2 tsp. dry mustard
1 10 oz. pkg. frozen chopped spinach, thawed and drained well

Directions:
Directions:
Saute onion in margerine or butter until translucent. Preheat oven to 350 degrees. Lightly beat eggs; add remaining ingredients (except spinach) and mix well. Stir in thawed spinach. Grease a 1 1/2 quart casserole dish. pour in spinach mixture. Bake approx. 35 min. or until knife inserted in middle comes out clean.
