Ingredients:
Ingredients:
5 egg yolks, beaten
1 (14 ounce) can sweetened condensed milk
1/2 c. lime juice
1 (9 inch) prepared graham cracker crust

Directions:
Directions:
1. Preheat oven to 375º.
2. Combine the egg yolks, sweetened condensed milk and lime juice. Mix well. Pour into unbaked graham cracker shell.
3. Bake for 15 minutes. Cool. Serve with whipped topping.

NOTE: Key limes are hard to find and it takes a lot of squeezing to get enough juice, but provide the best flavor. Second best is fresh lime juice, and if all else fails, bottled lime juice works. Modifications of one cup of juice (instead of half cup), four egg yolks (instead of five), and two cans of sweetened condensed milk (instead of one), provide more volume and fill the larger-size pre-made pie crusts. With these changes, bake at least 30 minutes.

Personal Notes:
Susan T. made this for us in Tucson with real limes from Sharon Scherbring's trees. We all loved it. One piece of pie left in the refrigerator that night. Does anyone know who ate it?
