3 lbs. asparagus
1/2 cup olive or salad oil
1/4 cup red wine vinegar
1 tbsp. Dijon mustard
1 tsp. salt
3 tbsp. grated Parmesan cheese
1/4 cup minced prosciutto or cooked ham, about 2 oz. (optional)

About 3 hours before serving or early in day:

1. Hold base of each aparagus stalk firmly and bend stalk; end will break off at spot where it becomes too tough to eat. Discard ends; trim scales if stalks are gritty.
2. In 12-inch skillet over high heat, in 1/2 inch boiling water, heat asparagus to boiling. Reduce heat to low; cover and simmer 5 minutes or until asparagus is tender-crisp; drain well.
3. In 13x9 glass baking dish, prepare vinaigrette: With wire whisk or fork, mix olive or salad oil, vinegar, mustard, salt and 2 tbsp. Parmesan cheese. Add asparagus to vinaigrette, turning to coat well. Cover with plastic wrap and refrigerate at least 2 hours to blend flavors, turning asparagus occasionally.
4. To serve, spoon asparagus and vinaigrette onto platter. Sprinkle ham and remaining 1 tbsp. Parmesan cheese over asparagus. Serves 8.
