Persian Rice Recipe

1 qt. water
1 Tbsp. salt
3/4 C. Basmati rice
1 1/2 tsp. butter
1 Tbsp. fresh chopped dill
1/4 C. chopped Pistachio nuts

Directions:
Directions:
In a large saucepan, bring water and salt to a boil. Add rice and cook 10 minutes. Drain and rinse rice. Stir in dill and Pistachio nuts. In a large non-stick skillet, melt butter and spoon rice over the butter. Cover the pan with a kitchen towel (or a paper towel) and a heavy lid. Fold edges of towel up and over the lid (prevents the towel from burning). Cook the rice over medium-low heat until tender and a crust forms on the bottom, 34-45 minutes. Spoon loose rice onto a serving platter and spoon the crunchy rice over the fluffy rice. Serves 4.

This sounds like a strange procedure to prepare rice, but it's well worth the effort. I usually invert the pan over a serving dish to remove the rice, and go from there.
