2 lbs. medium russet potatoes
3/4 C. half & half
2 Tbsp. butter
1 1/4 C. grated Fontina cheese (about 6 ozs.)
3 Tbsp. fresh chopped parsley

Directions:
Directions:
Preheat oven to 375. Bake the potatoes until tender, about 1 hour. Cool. Bring half and half to a simmer in a heavy saucepan. Scrape the potatoes from the skins into a large bowl. Mash. Mix in half and half. Add butter; stir vigorously until butter melts and potatoes are smooth. Stir in 2/3 of the cheese and 3 Tbsp. chopped parsley. Season to taste with salt and pepper. Transfer potatoes an 11x7x2-inch glass baking dish. Sprinkle with remaining cheese. Bake in preheated oven until heated through and cheese melts, about 15 minutes. Serves 6.
