2 1/4 cups all-purpose flour
1 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
3 or 4 very ripe bananas
1 1/4 cups sugar
2/3 cups vegetable oil
2 large eggs
1 tsp. vanilla
1 cup chopped walnuts

Directions:
Directions:
Preheat oven to 350º. Grease and flour 9X5 inch loaf pan. I like to line bottom of pan with waxed paper to insure easy removal from the pan.

Whisk together flour, baking powder, baking soda
and salt in a bowl. Mash bananas with fork in another bowl, then whisk in sugar, oil, eggs, vanilla and walnuts. Whisk in flour mixture until just combined. Pour batter into pan and smooth top. Bake until toothpick inserted in middle comes out clean, about 1 1/4 hours. Turn bread out onto rack to cool.
