1 pkg corn bread stuffing mix
¼ cup butter, cut in pieces
1 ½ cup hot water
½ cup green pepper, chopped
1 cup onion, chopped
2 Tbsp salad oil
1 lb ground beef
1 16-oz can tomatoes
1 16-oz can whole kernel corn, drained
2 Tbsp chili powder
1 cup cheddar cheese, grated
1 16-oz can pitted whole ripe black olives, drained

Directions:
Directions:
Combine contents of stuffing seasoning packet, butter and hot water in 1 ½ quart bowl; stir just to blend and partially melt butter. Add stuffing crumbs and stir to moisten. Let stand until water is absorbed. Saute pepper and onion in oil just to tender; add beef and brown. Stir in tomatoes, corn and chili powder; add grated cheese and olives. Place mixture in a 3 quart casserole. Top with stuffing. Bake uncovered at 400° for 30 minutes.
