1/2 cup Extra Virgin Olive Oil
1 pound Italian style turkey sausages, casings removed and chopped
10 ounces cremini mushrooms, sliced
3/4 tsp Kosher salt
3/4 tsp freshly ground pepper
1 (10 ounce) package baby peas
1/2 cup canned low sodium chicken stock
1 pound bow-tie pasta
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh Italian parsley

In a large saute pan, heat 2 tbs oil on medium high heat. Add sausage and saute for 5 minutes until golden brown. Remove the sausage and set aside. Heat 2 more tbs of oil in the same pan. Add the mushrooms and 1/2 tsp each of salt and pepper. Saute until all the liquid is evaporated, about 8 minutes. Add peas and saute for 2 minutes. Return sausage to the pan. Add chicken stock to pan and heat all ingredients until blended, about 3 minutes.

Meanwhile, cook pasta according to package directions to al dente. Drain pasta, reserving 1/2 cup of the cooking water. Return the pasta back to the pot and add the sausage and vegetables to the pot. Toss over medium heat to combine ingredients and add the reserved cooking water to moisten, about 5 minutes. Drizzle in the remaining oil. Season the pasta with salt and pepper to taste. Remove the pan from heat. Add the Parmesan cheese and toss to combine. Transfer the pasta mixture to a large bowl. Sprinkle parsley to garnish and serve.
