1 lb hamburger, browned
¾ cup celery, chopped
¾ cup onion, chopped
¾ cup carrots, chopped
1 tsp dried basil
6 Tbsp butter, divided
4 cups potatoes, peeled and diced
2 cans chicken broth
¼ cup flour
1-2 cup milk
2 cups-8 oz velveeta cheese
2 oz cream cheese
Salt and pepper, to taste
Crushed red pepper, to taste

Directions:
Directions:
Saute onion, celery, carrots, and basil in 4 Tbsp butter, 10 minutes. Add beef, potatoes and broth. Simmer 10-12 minutes until potatoes are tender. Melt remaining 2 Tbsp butter and mix with flour, add this to thicken soup.

Reduce to low heat. Add cheeses, milk, salt and pepper, crushed pepper; stir well. Ready to eat when the cheese melts. Serve with crusty bread.

NOTE: It works well to make this the day ahead and reheat in crockpot. Enjoy!
