2 lbs. red potatoes peeled & cut into ½ in. cubes
¾ cups carrots, chopped
1 medium onion, chopped
3 cups chicken broth
½ tsp. salt
¼ tsp. black pepper
1 cup half & half
2 cups shredded cheddar cheese

Directions:
Directions:
Place potatoes, carrots, onion, broth and salt in slow cooker. Cover, cook on low 6-7 hours or on high 3-3 ½ hours or until vegetables are tender.

Stir in half & half and pepper cover cook on high 15 minutes. Turn off heat & remove cover, let stand 5 minutes. Stir in cheese until melted.
