2 c. shortening
2 c. white sugar
2 c. canned pumpkin
2 eggs
2 tsp. baking soda
1 1/2 tsp ground cinnamon
1 tsp salt
4 c. all-purpose flour
6 T. butter
8 T. milk
2 c. confectioners' sugar
1 1/2 tsp vanilla extract
1 c. packed brown sugar

Directions:
Directions:
1. Preheat oven to 350º.
2. Cream shortening, white sugar and pumpkin.
3. Add eggs and mix well.
4. Sift together the baking soda, ground cinnamon, salt and flour.
5. Add to pumpkin mixture and mix well.
6. Drop from spoon to cookie sheet.
7. Bake 10 minutes.

To Make Frosting:
1. In a pan, cook butter, milk, and brown sugar until dissolved.
2. Let cool COMPLETELY. Put in refrigerator if necessary.
3. Add confectioners' sugar and vanilla.
4. Spread over warm cookies.

TIP: Make frosting first to give it time to cool before you add the confectioners' sugar and vanilla. Otherwise the consistency is too runny for the frosting to stick. You want it to be a thick caramel color, like in the picture, not watery or clumpy.
