12 eggs
1 cup plain yogurt
1 tsp Lawry's seasoned salt (or, to taste)
3/4 stick butter or margarine
2 cups shredded hash brown potatoes (thawed)
(I really love the "O'Brian" kind with chopped onions and peppers)
or add your own 1/4 cup onion and some chopped peppers
1 cup grated sharp cheddar cheese

Directions:

Beat eggs, yogurt and salt together. Melt butter and lightly sauté onion. Add thawed potatoes. Stir to mix until potatoes are slightly cooked.
Pour in egg mixture and lightly stir to blend ingredients. Pour into casserole dish. Sprinkle grated cheese over casserole. Bake at 350º for approximately 25 minutes or until knife comes out clean when inserted.

Cut into 12 squares.

The is part of the standard menu for our Saturday morning ward Christmas party. Works great as brunch item and is a fun alternative to German pancakes or scrambled eggs.
