1 tsp minced lemon zest
2 Tbsp lemon juice
1/2 C dry long-grain rice

Directions:
Directions:
Bring water and juice to a boil in a saucepan. Add rice, cover, reduce heat to low, and simmer until liquid is absorbed, 20 minutes. Stir in zest, and season with salt and pepper.
Best served with Hot and Sweet Shrimp
