2 c sugar
2 c flour
1 c Wesson oil
2 eggs
3 c finely chopped apples with or without skins
1 c chopped pecans
1 tsp cinnamon
1 tsp baking powder
1 tsp baking soda
3/4 tsp salt
1 tsp cinnamon

TOPPING:
1/2 c brown sugar
1/4 c margarine
3 tbsp milk
1 tsp vanilla

Preheat oven to 350º.

In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, salt and cinnamon. In another mixing bowl, beat eggs until frothy. Add oil and vanilla; beat until blended. Stir into flour mixture; mix well. Fold in apples and pecans.

Pour into a 11 1/2-in. x 7-in. x 2-in. baking pan coated with nonstick cooking spray. Bake at 350 degrees F for 40-45 minutes or until a toothpick inserted near the center comes out clean.

In a small saucepan, melt butter. Add the brown sugar, milk and vanilla. Bring to a boil, stirring constantly. Pour over warm cake. Serve warm.
