Halve the avocados length-wise. Remove the pit and scoop out all the deliciousness onto a large plate. Next sprinkle some salt and mash away with a fork until you get the avocado to the consistency you want, leaving some lumps and chunks. Now throw on a big pile of pico and stir together gently. Test with a chip to get an accurate gauge of the salt content.

Serve with tortilla chips, on quesadillas, spooned over grilled chicken, over taco salad, or on Mexican pizza.

HInt: To void browning, gently press plastic wrap against the surface of the guacamole until serving. Guacamole will keep less than 24 hours in the refrigerator.
