2 cups raw wild rice
4 cups water
2 teaspoons salt
2 pounds lean ground beef
1 pound fresh mushrooms (or canned)
1/2 cup chopped celery
1 cup chopped onion
1/2 cup butter
1/4 cup soy sauce
2 cups dairy sour cream
2 teaspoons salt (or less)
1/4 teaspoon pepper
1/2 cup slivered almonds (save some for garnish)

Cook Wild Rice according to package directions until soft and slightly curled. Drain if necessary.
Brown ground beef and drain. Rinse mushrooms and cut off stems, slice. Saute sliced mushrooms, onions, and celery in butter for 5-10 minutes. Combine soy sauce,sour cream, salt, and pepper. Add cooked wild rice and browned ground beef with onion, mushroom, and celery mixture. Add most of the almonds and toss lightly. Place everything in a slightly buttered 3 quart casserole dish. Bake uncovered in a 350 degree oven for approximately one hour. Add water if needed and season to taste. Stir several times. Garnish with slivered almonds.

I usually made this with one pound more of ground beef and more soy sauce. Note: Follow the Wild Rice Overnight recipe in the Side Dishes section to make the rice ahead of time.
