1 can (10-1/2 oz) cream of celery soup
1/2 cup skim milk
1/2 cup cooked fresh or frozen peas
1 pimento, minced
5 cups sliced, cooked potatoes (about 4 medium-sized potatoes)
1 cup (1/4 lb) shredded sharp cheddar cheese

Directions:
Directions:
Preheat oven to 400º. Combine soup and milk in a saucepan and heat, stirring until blended. Remove from heat and stir in peas and pimento. In a buttered 9-inch-square baking pan or casserole, alternate layers of sliced potatoes, soup mixture and cheese. Bake for 55 minutes or until the top is golden brown. Makes 8 to 10 servings.

An easy way to prepare the potatoes is to cook them whole in their skins, then peel and slice when cool enough to handle.
