Unire tutti gli ingredienti.Miscelare fino ad ottenere un impasto piuttosto consistente.Lasciare lievitare per circa un’ora e mezza, ben coperto, possibilmente in una cassa di legno.Sezionare dei piccoli pani cilindrici e lasciare riposare ulteriormente.Rilavorare, stendere e appiattire ogni panetto fino a farne una striscia.Lavorare ogni striscia con il palmo della mano solo su un bordo conferendole delle particolari forme, dette recchie, per l’evidente rassomiglianza con le orecchie umane.Unire le due estremità ottenendo la forma rotonda classica della ciambella. Lessare le ciambelle per circa 10 minuti in acqua bollente.Lasciare raffreddare e asciugare.Cuocere in forno, possibilmente a legna, a 300°C per circa 20 minuti
