1 pound of penne pasta
4 tbsp. of butter
1 tsp of olive oil
6 boneless, skinless chicken breasts
1/2 cup plus 2 tablespoons of flour
4 garlic cloves, minced
6 cups of milk
10 ounces of mushrooms, sliced
1/2 cup oil-packed sun dried tomatoes, drained and sliced
1 1/2 cups shredded provolone
1 cup grated Parmesan

Preheat oven to 400 degrees. Cook pasta until al dente. Drain pasta and return to pot. Cook chicken in skillet with oil and season with salt and pepper. In Dutch oven, melt butter, adding flour and garlic; whisk for 1 min. While whisking, add milk gradually and simmer. Add mushrooms and tomatoes, cook 1 min. Turn off heat and gradually add in cheeses. Save 1/2 cup of Parmesan for the top of dish. Put chicken and pasta in baking dish. Sprinkle with remaining cheese. Bake, uncovered, for 25 mins or until bubbly. Let stand a few mins before serving.
