1 package Knorr Vegetable Soup Mix
1 1/2 cups sour cream
1 cup Hellman's mayonnaise
3 chopped green onions, stem and bulb
10-ounce box frozen chopped spinach, thawed and squeezed dry between paper towels
1 8-ounce can water chestnuts, finely chopped
1/2 cup shredded Cheddar cheese (optional)

1. Stir together the dry soup mix, sour cream, and mayonnaise; mix well.

2. Stir in green onions, spinach, water chestnuts, and cheese, if using; refrigerate a few hours before serving time, to blend flavors. Serve with pumpernickel bread or crackers. *Can buy a round loaf of pumpernickel, cut small slice off top, remove bread from center, cutting in bite-sized chunks, and use bread shell as bowl, scooping dip into middle, then use bread cubes for dipping.
