6 T. butter
1 T. minced onion
1/2 c. flour
3 c. chicken broth
2 c. cooked wild rice, see instructions below
1/3 c. minced ham
1/2 c. finely grated carrots
3 T. chopped slivered almonds
1/2 tsp. salt
1 c. half and half
2 T. dry sherry (optional)

Directions:
Melt butter in saucepan and saute onion until tender. Blend in flour and gradually add broth. Cook, stirring constantly until mixture comes to a boil. Boil one minute. Stir in rice, ham, carrots, almonds and salt. Simmer about five minutes. Blend in half and half and sherry. Heat to serving temperature.

To cook wild rice: rinse 1 cup of wild rice, combine with 4 cuts water and 1 teaspoon salt. Bring to a boil, cover and simmer for 50 minutes. Don't want it to be mushy, just the kernels cracked. Makes 3 - 4 cups.
