1 potato, peeled & cut into small pieces.
2 stalks celery,cut up
1 carrot,chopped
1 onion,chopped
1 clove garlic,minced
4T. butter
6 red peppers,seeded and cut into small chunks
1 1/2 t. peppercorns
6 c. chicken stock
couple of bay leaves
4 c. 1/2&1/2
salt & pepper to taste

Directions:
Saute the potato,celery,carrot,onion & garlic in the butter over low heat for 5-6 minutes or until the veggies are tender. Add the peppers,peppercorns,chicken stock and bay leaves and boil until the red peppers become tender.Remove from heat and let stand for 20 mins. or so. Puree the mixture in small batches in a blender or food processor.Put back on the heat,add the cream, bring to a boil(be careful,it can burn easily).Salt & pepper. Garnish with parsley.
