2 T butter (opt. olive oil)
1/2 lb spinach chopped
1c chopped broccoli (precooked slightly)
6 green onion minced
1 med green or red pepper chopped
1 3/4 c ham or browned sausage
9 eggs
2 c milk(part half & half)
1 1/2 c (6 oz) shredded cheddar/ Parmesan cheese
1 1/2 c mozzarella cheese shredded

Directions:

Saute veggies until crisp/tender in butter/oil adding spinach and green onion tops at the end. Add ham or browned sausage.

Mix eggs and milk till blended.Add veggies and meat mixture and shredded cheese (reserving 1/2 c mozzarella). Pour in greased 9X13 pan, cover and refrigerate overnight or bake immediately.

Bake covered for 35 minutes, add reserved cheese and bake 10 more minutes. Let stand 5 minutes. Dish is done if knife inserted comes out clean.
