2 cloves finely chopped garlic
1 Tbsp vegetable oil
8 boneless skinless chicken breasts
1/2 tsp salt AND pepper
12 oz. sliced mushrooms
1 cup chicken broth
1/2 cup water
1/4 cup cornstarch
3 Tbsp fresh chopped parsley

Directions:
Directions:
Place garlic and oil in crockpot. Sprinkle chicken with salt and pepper, set in cooker over garlic. Place mushrooms in cooker, pour broth over all. Cover, cook on low 5 -6 hours. Remove chicken from cooker, place on plate and cover to keep warm. In a small bowl, mix water and starch. Pour and mix into liquid in cooker until smooth. Increase heat to high, cover, and cook 20 minutes until sauce is thickened. Return chicken to cooker. Cook additional 5 minutes. To serve, sprinkle parsley over chicken.

Instead of broth, try using a sweet Marsala wine. Serve on a bed of white rice with a green salad.
