4-6 C Sweet Potatoes diced
2-3 Red Bell Peppers seeded and chopped
1 Onion roughly chopped
4 Garlic Cloves chopped
1 1/4 C Dry White Wine
1 QT or 4 C Vegetable or Chicken Broth
1/8 tsp Cayenne

Directions:
Wash, cut in half, remove seeds and chop bell peppers. Save a small quantity of finely diced Red Bell Pepper to garnish bowls of soup. Peel sweet potatoes and dice. Combine diced sweet potatoes with the rest of the Red Bell Pepper and remaining ingredients in a large soup pan. Boil then lower heat to simmer for 30 minutes. Puree in a blender or food processor. Reheat. Garnish bowls with Red Pepper.
