4 baking potatoes (peeled and quartered)
1/2 head broccoli (stems discarded) & florets closely chopped
1Tbsp butter
Salt & Pepper

1 lb. skinless, boneless turkey breasts, cut into four pieces and pounded thin.
1 cup Panko bread crumbs.
1/4 cup parmesan cheese.
1 egg
2 Tbsp EVOO (extra virgin olive oil)

Directions:
Directions:
Boil the potatoes (in salted water) and cook until half-way tender, about 7 minutes. Add broccoli florets and cook until the veggies are tender, about 5 minutes. Drain, return to pot, add butter and season with salt & pepper. Cover to keep warm. Meanwhile, season the turkey with salt & pepper. Combine Panko and parmesan. In another bowl, beat the egg. Dip each cutlet into egg, then into the Panko mixture. Press to coat. In a large non-stick skillet, heat 1 Tbsp EVOO over medium heat. Add 2 cutlets and cook, turn once, until just cooked though, about 6 - 8 minutes. Repeat with remaining. Serve.
