Puff Pastry dough (store bought, 2 sheets)
MacIntosh or Granny Smith Apple, chopped into small pieces
Salt
Eggs - 2
Sour Cream - 3/4 cup
Gruyere Cheese, grated - 1/2 cup
Butter or non-stick baking spray

Using butter or non-stick baking spray thoroughly spray a mini-muffin baking tray.

Thaw the puff pastry sheets per the directions and using a 2 1/2 in glass or round cookie cutter cut 24 circles out of the puff pastry dough. Place a circle in each of the mini-muffin depressions and push down.

Whisk together the 2 eggs and the 3/4 cup of sour cream. Add in a pinch of salt. Mix in the 1/2 cup of grated Gruyere cheese.

Using a teaspoon spoon 1/2 tsp. of the egg mixture into each puff pastry shell. Add in 1/2 tsp. of the chopped apple. Cover with 1-1/2 tsp. of the egg mixture to cover the apple and fill the shell.

Bake at 400º for 20 minutes or until pastry is golden and the egg mixture is set.

Serve warm.

This is a really easy appetizer and fast to make. I have never used anything but the apple, but think that some chopped ham or veggies would work well too.
