2 c. chopped celery
1 c. chopped onion
½ c. water
1 tsp. crushed rosemary
2 cans chow mein noodles
2 cans cream of mushroom soup
½ c. milk
2 c. cubed chicken

Directions:
Directions:
1. Preheat oven to 350º. Reserve ½ c. of noodles for the top.
2. Cook celery and onion in water about 5 minutes or until tender. Add rosemary.
3. Mix all ingredients together and bake in flat baking dish for 45 minutes to 1 hr. Sprinkle remaining chow mein noodles on top and return to oven until crisp - about 5 minutes.

a/k/a Chinese Noodle Chicken Casserole. Another tried and true recipe from mom. Also works with turkey. I usually scale this recipe based on how much leftover meat I am using. You can also add fresh mushrooms to the celery and onion mixture while it is cooking if your family likes them. Freezes well.
