6 Flounder Filets (Tilapia does well too)
½ Cup Panko (can use cracker crumbs or crushed potato chips)
½ cup Parmesan cheese
1 cup milk

Directions:
Directions:
Preheat oven to 500 degrees.
Soak flounder in milk 15-20 minutes. (I have left mine overnight and it does fine)
Mix crumbs and Parmesan cheese together and roll filets in mixture. Place filets in a greased glass casserole dish. (What we do is put tinfoil on a baking sheet and spray with Pam)

Bake at 500 degrees in oven for 10 minutes.

If use a thicker fish like grouper, cook longer, at least 15 minutes. Tilapia and flounder work best to me.
