16 oz Extra Sharp NY Cheddar Cheese
1 stick margarine - softened
1 ¾ cup flour
½ tsp salt
Tabasco

Directions:

Preheat over to 350 degrees

Grate cheese and blend with softened margarine. (use hands)
Add 3 shakes of Tabasco (or more)

Mix salt and flour. Once well blended, add flour mixture ½ cup at the time until it is like a pastry dough.

Prepare a cutting board or surface with flour to roll dough

Roll very thin – almost paper thin.

Cut into strips (about ¼ “) and cut into ~ 8” lengths

Place onto cookie sheet (ungreased)

SHAKE SALT OVER THEM BEFORE COOKED (this is the secret)

Bake at 350 degrees for ~ 15 minutes or less or to golden brown.

*** Make a big note for yourself to salt each batch BEFORE you cook the cheese straws. It is a trick worth remembering.
