1 cup sugar
1 cup softened butter
3 tablespoons Soy milk or Rice milk
1 teaspoon of vanilla
3 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt

Directions:
Directions:
1. Cream the sugar and butter together until fluffy; add the milk and vanilla and beat until combined. Set aside.

2. In a medium sized bowl, sift the flour, baking powder, and salt together. Add to the wet ingredients in batches, mixing until combined.

3. When dough is sufficiently mixed, form into a disk and chill for 15 minutes.

4. Roll out dough and cut into shapes. Bake at 350ºF for 8-12 minutes (depending on the size and thickness of your cookies).
