1 C Butter
2 C Sugar
2 eggs
2 1/2 C plain flour
1 1/2 tsp baking soda
1/2 tsp salt
1 c buttermilk
1 tsp vanilla
2 3 oz red coloring
1 TAB cocoa
1 TAB vinegar
3 9 inch pans

ICING INGREDIENTS (doubled recipe)
2 8 oz pkg cream cheese
2 Box 10X sugar
4 tsp vanilla
2 sticks butter
(have cream cheese and butter at room temperature)

Preheat Oven at 350º
CAKE:
Cream the 1 cup of butter and 2 cups of sugar
Make a paste with 1 Tab of cocoa and 1 Tab of vinegar.
To the creamed butter/sugar mixture, add the 2 eggs, the plain flour, baking soda, salt, buttermilk, vanilla, cocoa pasts and red coloring.
Blend well until smooth. Pour into prepared cake pans. Cook at 350º for 30 minutes. Let cool before icing.

ICING:
After cream cheese and butter are at room temperature, cream them with a mixer until smooth. Gradually add 10X sugar along with vanilla until very smooth. Ice cooled cake. YUM!!!

Nothing beats a home made Red Velvet Cake versus a store bought one. Some people add nuts in the icing to cut the sweets but not me. This recipe is from Lorette Colombo's kitchen.
