Growing up in the suburbs of Houston in the 1970's, I used to go to Corpus Christi for a couple of weeks each summer to stay with my grandparents. Mamo and I would swim in the bay and share a Whataburger picnic, shop til we dropped at Frost Brothers and Julian Gold, and then recover while watching As the World Turns. I loved it all. I learned this recipe during those magical summer visits.

Mamo's Summer Peaches is nostalgic because making this dish and sharing it is an opportunity to make your own Summer Peaches memories. It's also evolutionary as nothing is wasted. Please note: If you don't have a peach tree in your backyard try to find the freshest peaches possible.

Mamo's Summer Peaches

In June or July, pick fresh peaches from backyard peach tree until apron pockets are full. Take inside and wash, peel, and remove pits at the kitchen sink. Discard peel and pits in compost heap. Strip remaining peach tree stem clean and set aside as a switch if needed. (my brother Marc was around some summers)

Being careful to save juice from the peaches, cut fruit into bite-size pieces and drop into mason jars using both hands. Squeeze some lemon and toss a little sugar over each jar of peaches before tightening the lids. Carry out to the deep freeze. Leave til frozen.

Eat right out of the jar with a spoon. Especially good on saturday night while watching The Jeffersons and All in the Family with Papo.
