MONICA'S GREEN CHILI SHREDDED BEEF OR PORK Recipe

Ingredients: Large piece of lean beef (roast) or pork lion 2 large onions (sliced) 6-7 chopped garlic cloves 4-5 fresh poblano chili (cut in thin strips) salt and pepper olive oil

Directions:Heat about 2T of olive oil in skillet add sliced garlic, meat and brown the outside. Transfer meat to a (clay pot that has been soaked in water) and cook in oven until extremely tender. May also be cooked in a crock pot or on the stove until very tender (easy to pull apart).
Remove meat and let cool - keep any juices from the meat.
Roast poblano chili's on gas stove or BBQ until blistered all the way around. Immediately put chili's into plastic bag and seal. Let stand for about 10 mins.
Chop onions into thin strips.
Shred meat into small strips being careful to remove any fat.
Peel off the chili skins, cut top off chili and take out seeds (wash with water to help with skin and seed removal), cut chili into long 3" thin strips.
Add meat, chili and onion into the original pan with remaining juice. Season to taste. Heat slightly until onions are limp.
Serve with fresh grilled tortillas. |
