1 1/2 pounds lean ground beef
1 cup tomato juice
3/4 cup Quaker Oats, quick or old fashioned, uncooked
1 egg or 2 egg whites, slightly beaten
1/4 cup chopped onion
1/2 teaspoon salt (optional)
1/4 teaspoon black pepper

Directions:
Directions:
Heat oven to 350º. Combine all ingredients; mix lightly but thoroughly. Press into 8" x 4" loaf pan; bake 1 hour. Drain; let stand 5 minutes. 8 servings

Microwave variation for mini-meat loaves
Shape meat mixture to form six 4" x 2" loaves; place in 8 or 9 inch glass microwaveable baking dish. Microwave at HIGH 12 to 14 minutes, rotating dish after 6 minutes; drain. Let stand 5 minutes before serving. Makes 6 mini-loaves
