6 medium Bartlett pears (pared and cored)
3 tablespoons lemon juice
1/2 cup sugar
2 tablespoons all purpose flour
1 teaspoon grated lemon peel
3 slices cheese
One 9" unbaked pastry shell

Crumb Topping:
Mix together
1/2 cup flour
1/2 cup sugar
1/2 teaspoon cinnamon
1/2 teaspoon ginger
1/4 teaspoon mace
Cut in 1/4 cup butter until crumbly

Directions:
Directions:
Slice 5 pears; cut remaining pear in sixths. Sprinkle pears with lemon juice. Mix together flour, sugar and lemon peel. Stir into sliced pears. Spoon into pastry shell. Arrange pear wedges atop sliced pears. Sprinkle with crumb topping. Bake at 400º for 45 minutes or until pears are tender. Remove from oven, cut cheese in half diagonally. Arrange on pie. Serve warm.
