3 tablespoons olive oil
3/4 cup chopped onions
1/2 cup chopped celery
1 clove garlic, minced
1/2 cup uncooked long-grain white rice
2 cans (14.5 ounces each Diced Tomatoes, non-drained
1 teaspoon salt
1 teaspoon ground black pepper
1/2 teaspoon granulated sugar
1/8 teaspoon cayenne pepper
1 pound firm white fish
1/4 cup finely chopped fresh parsley

Directions:
Directions:
1 Heat oil in large skillet. Add onions, celery and garlic; saute for 2 to 3 minutes or until vegetables are tender.

2. Stir in rice, saute for 5 minutes or until rice browns slightly. Add non-drained tomatoes, salt, black pepper, sugar and cayenne pepper; mix well.

3. Place fish in bottom of greased 12x7 1/2 inch baking dish. Spoon rice mixture over fish; cover with foil.

4. Baked in preheated 400ºF oven for 45 to 50 minutes or until rice is tender. Let stand for 5 minutes before serving. Sprinkle with parsley.
