20 ounces Cream cheese
1 1/4 cups sour cream
1 cup sugar
1 tbsp Vanilla
2 eggs
3 yolks
1/3 cup heavy cream

standard Graham cracker crust (I use the boxed graham cracker crumbs and the directions off of that) you can also use a chocolate cookie crust its very tasty.

Preheat oven to 325
Use your Kitchen aid style mixer or a hand mixer (the kitchen aid is easier)
Beat the sour cream for 20 seconds (it coats the beaters and the bowl and makes it easier to mix in the cream cheese)
add the cream cheese and sugar and mix until smooth.
in a separate bowl mix vanilla eggs, yolks and cream, with the mixer on low add to the cream cheese mixture making sure to scrape down the bowl.
place the cheesecake into the oven in the middle rack (you can use a water bath technique but i usually don't, the only difference is sometimes the top cracks without it) then LOWER the oven temp to 250º cook for 1 hour. Turn the oven off and open door for one minute. close door and leave cheesecake in oven for one more hour. place cheesecake in fridge and refrigerate overnight or until completely cool.
