4 egg whites
25 grams of granulated sugar (a little bit more than a 1/2 cup)
25 grams of confectioner's sugar (same as above)

Heat oven to 140ºC...that's around 285ºF but 275ºF works just as well.
In a separate bowl, put granulated sugar and THEN confectioner's sugar. DO NOT MIX.
Whisk egg whites with an electric mixer until white and stiff.
SLOWLY add the contents of the sugar bowl, putting a little in, mixing it, then add more, etc. (if mixed properly, the batter should not move at all if the bowl is picked up and put on its side, if it moves only a little that is fine, otherwise you may have to start over)
Spoon or pump batter, about the size of a baked cookie) onto a cookie sheet lined with a silicon mat or foil.
Bake for one hour.

I got this recipe from a French foreign exchange student, Orianne, that is why all of the directions are in metric measurements. Lemon, mint, or mini chocolate chips may be added to this, however they are already very sweet. In France these are served with chestnut jam. Bon appetit!
