Ingredients:

3 very ripe bananas - mashed
Add and mix together:
1 c. sugar
1 egg
3 T. vegetable oil
1 T. vanilla
Add the following:
2 c. flour (minus 4 tablespoons)
1 tsp. salt
1 tsp. baking soda

Directions:
Directions:
Preheat oven to 375º. Grease and flour loaf pan.
Following directions above, mix ingredients.
Immediately turn preheated oven down to 350º and bake 45060 minutes or until inserted toothpick comes out "nearly" clean.

(FYI ~I always add more vanilla than called for and I never minus the flour. This has never let me down.)
