1 large sliced onion
2 ozs melted butter or margarine
2 level TBsp plain flour
2 level TBsp curry powder
Salt & pepper to taste
1 tin evaporated milk
6 hard boiled eggs diced
1 x 7 oz can of salmon
2 cups cooked mashed potato
Some grated cheese for the top

Directions:
Directions:
Saute onion in butter.

Mix flour, curry powder, salt & pepper to a thin paste with water. Add evaporated milk & stir into onion until thickened.

Add boiled eggs and flaked salmon

Pour into a shallow greased casserole dish, decorate edge with mashed potatoes, sprinkle over the cheese and a little paprika.

Bake in a moderate oven 15-20 minutes.
