4 large baking potatoes
2/3 cup flour
3/4 tsp. salt
4 green onions chopped and divided
2 cup cheddar cheese, shredded
2/3 cup butter
6 cups whole milk
1/2 tsp. pepper
12 slices bacon, cooked, crumbled and divided
1 carton (8 oz) sour cream

Bake potatoes at 400 º for one hour and cool. Scoop out pulp. Melt butter. Add flour stirring until smooth. Cook for 1 minute, stirring constantly. Gradually add milk and cook over medium heat until mixture is thickened and bubbly. Add potato pulp, salt, pepper, 2 T. green onions, 1/2 cup bacon, and 1 cup cheese. Cook until well heated. Add sour cream. Serve with onions, bacon, and cheese sprinkled on top.

Quick Tip: I sometimes peel and cube the potatoes and boil them until slightly tender to quicken the process. Then I add them to the soup as directed.
