1 lb. fresh Brussels sprouts, ends trimmed & cut in 1/2 lengthwise
2 - 1/4-inch slices pancetta, chopped into small cubes
4 cloves garlic, minced
2 tbsp. extra virgin olive oil
Salt and pepper to taste
1/4 cup chicken stock
2 tbsp. sugar

Directions:
In a medium skillet, over medium heat saute the pancetta, until crispy. Add minced garlic and saute 2 - 3 minutes until fragrant and light, golden brown. Add olive oil, Brussels sprouts and salt and pepper and saute over high heat, until the are browned. Shake the pan occasionally. Add chicken stock and sugar, then allow the sugar to caramelize on the Brussels sprouts and form a medium brown coating. Serve hot.
